Ripe avocado has the texture of chocolate pudding and almost no flavor of its own once cocoa goes in. It supplies the fat and creaminess that dairy would. Chill it for an hour so it firms up.
Ingredients
Makes 1 serving.
- 1 scoop chocolate plant protein powder (pea/rice blend, about 32 g)
- 1 ripe avocado
- 2 tbsp unsweetened cocoa powder
- ½ cup unsweetened almond milk
- 2 tbsp pure maple syrup
- ½ tsp vanilla extract
- 1 pinch salt
Method
- Scoop the avocado into a food processor or blender.
- Add the protein powder, cocoa, almond milk, maple syrup, vanilla, and salt.
- Blend until completely smooth, scraping down the sides twice.
- Spoon into a glass or bowl and chill for at least an hour. Top with berries.

Tips
- The avocado must be ripe, or the pudding will have green flecks.
- Use less milk for a thick mousse and more for a looser pudding.
Swaps and variations
- Use a frozen banana in place of the maple syrup.
- Add a teaspoon of instant espresso powder to deepen the chocolate.
