Silken tofu is a quiet ingredient. It has almost no flavor and a very smooth texture, so it takes on whatever it is blended with. With cocoa it turns into chocolate custard. This version also uses plant protein for extra protein.
Ingredients
Makes 1 serving.
- 1 cup silken tofu
- ½ scoop chocolate plant protein powder (pea/rice blend, about 32 g)
- 2 tbsp unsweetened cocoa powder
- 2 tbsp pure maple syrup
- ½ tsp vanilla extract
- 1 pinch salt
Method
- Drain the tofu and pat it dry.
- Add everything to a blender or food processor.
- Blend for a full minute, scraping the sides, until completely smooth.
- Chill for at least an hour before serving.

Tips
- Use silken tofu. Firm tofu stays grainy.
- Taste before chilling. Pudding tastes less sweet once it is cold, so add maple syrup if needed.
Swaps and variations
- Add a drop of mint extract.
- Top with raspberries.
