Green Protein Smoothie Bowl

A thick green bowl that tastes like tropical fruit.

Green Protein Smoothie Bowl

Spinach, frozen pineapple, and banana make a base with the color of a green smoothie and the flavor of a fruit bowl. Keep the liquid low so the bowl stays thick. Chia seeds and coconut add crunch on top.

Ingredients

Makes 1 serving.

  • 1 scoop vanilla plant protein powder (pea/rice blend, about 32 g)
  • 2 cups fresh baby spinach
  • ¾ cup frozen pineapple chunks
  • 1 medium frozen banana
  • ¼ cup unsweetened coconut milk beverage
  • 1 tbsp chia seeds
  • 1 tbsp unsweetened shredded coconut

Method

  1. Blend the spinach and coconut beverage first until smooth.
  2. Add the protein powder, pineapple, and banana and blend until thick, scraping the sides.
  3. Spoon into a bowl.
  4. Top with chia seeds and coconut.

Tips

  • Blend the spinach with the liquid first. Leaves do not break down once the frozen fruit goes in.
  • Use a tamper or stir often to keep the blades moving through thick fruit.

Swaps and variations

  • Use whey vanilla if you do not need it vegan.
  • Add kiwi on top.
