Casein protein thickens when mixed with a small amount of liquid and becomes pudding-like within minutes. That makes it a good fit for puddings. It also digests slowly, which is why people eat it before bed.
Ingredients
Makes 1 serving.
- 1 scoop vanilla casein protein powder (about 33 g)
- 2 tbsp powdered peanut butter
- ¼ cup plain nonfat Greek yogurt
- ¼ cup unsweetened almond milk
- ¼ tsp ground cinnamon
Method
- Combine the casein, powdered peanut butter, and cinnamon in a bowl.
- Add the yogurt and almond milk.
- Stir hard for a full minute until thick and smooth.
- Let it stand for ten minutes to thicken more, then eat.

Tips
- Add the liquid slowly. Casein absorbs a lot, and the texture changes quickly.

Swaps and variations
- Use chocolate casein for a chocolate-peanut version.
- Use regular peanut butter and less yogurt.
