Frozen cauliflower is nearly flavorless once blended with cocoa and protein. It adds thickness and a little fiber for almost no calories. Use the pre-riced frozen kind, because it blends smoother than florets.
Ingredients
Makes 1 serving.
- 1 scoop chocolate whey protein powder (about 30 g)
- 1 cup unsweetened almond milk
- 1 cup frozen riced cauliflower
- ½ medium frozen banana
- 1 tbsp unsweetened cocoa powder
- ½ tsp vanilla extract
- 4 drops liquid stevia
Method
- Add the almond milk, protein powder, and cocoa to the blender.
- Add the frozen cauliflower, frozen banana, vanilla, and stevia.
- Blend on high for a full minute, until completely smooth with no gritty bits.
- Taste and add another drop or two of stevia if needed.

Tips
- Do not use fresh cauliflower. It stays gritty and can taste cabbage-like.
- Half a banana is enough to cover the cauliflower. Leave it out and add an extra tablespoon of cocoa for a lower-sugar version.
Swaps and variations
- Use frozen zucchini in place of cauliflower for a milder flavor.
- Add a spoonful of peanut butter for a chocolate-peanut version.
