Hot liquid can make whey protein clump, so this recipe has a short method that avoids it. Mixing the powder into a small amount of cold milk first makes a paste that stirs into hot coffee without lumps.
Ingredients
Makes 1 serving.
- 1 scoop vanilla whey protein powder (about 30 g)
- 1 cup 2% milk
- 2 shots espresso
- ½ tsp ground cinnamon
- 1 tbsp pure maple syrup
- ¼ tsp vanilla extract
Method
- Whisk the protein powder with a splash of cold milk in a mug until it makes a smooth paste.
- Warm the rest of the milk in a pan or microwave until steaming, around 150°F (65°C).
- Stir the warm milk slowly into the paste, then stir in the maple syrup, cinnamon, and vanilla.
- Pour in the espresso and stir once. Add a little extra cinnamon on top.

Estimated from standard nutrition data for each ingredient, assuming about 24 g of protein per scoop of whey or casein and 22 g for plant powders. Brands vary, so check your label. Contains: milk.
Tips
- Do not boil the milk. High heat can curdle protein and leave a skin.
- A milk frother whisks the mixture smooth in seconds.
Swaps and variations
- Use oat milk for a creamier drink.
- Use casein protein for a thicker, pudding-like texture when warm.
