Most coffee shop pumpkin lattes contain very little pumpkin. This version uses puree, which adds some fiber and a real pumpkin flavor. Mix the protein with cold milk first so it does not clump in the heat.
Ingredients
Makes 1 serving.
- 1 scoop vanilla whey protein powder (about 30 g)
- 1 ¼ cups 2% milk
- 2 shots espresso
- ¼ cup canned pumpkin puree
- ½ tsp pumpkin pie spice
- 1 tbsp pure maple syrup
Method
- Whisk the protein powder with a quarter cup of cold milk until smooth.
- Warm the rest of the milk with the pumpkin, spice, and maple syrup in a small pan, whisking until steaming.
- Stir the hot mixture slowly into the protein paste.
- Add the espresso and top with a little whipped cream and spice.

Tips
- A hand frother gets the pumpkin fully blended into the milk.
- Warm the milk gently. High heat makes protein curdle.
Swaps and variations
- Add a dash of vanilla extract for a rounder flavor.
- Use decaf espresso for evenings.
