Carrot and orange are a classic juice combination. In a blender, the whole carrot adds fiber as well as sweetness. Ginger gives the drink some bite. A strong blender is useful here, because raw carrot is hard.
Ingredients
Makes 1 serving.
- 1 scoop vanilla plant protein powder (pea/rice blend, about 32 g)
- 1 medium carrot
- 1 medium orange, peeled
- 1 tsp fresh ginger, grated
- 1 cup unsweetened almond milk
- 5 ice cubes
Method
- Chop the carrot into small coins so it blends easily.
- Add the almond milk, carrot, orange, ginger, and protein powder to the blender.
- Blend on high for a full minute, until no carrot pieces are left. Add the ice and blend for 20 more seconds.
- Strain the smoothie if your blender leaves fibrous bits.

Tips
- Grate the carrot first if your blender is not very powerful.
- Peel the orange, but leave some of the white pith. It carries fiber and little bitterness.
Swaps and variations
- Add a pinch of turmeric for color and an earthy flavor.
- Use orange juice in place of the whole orange for a smoother drink.
